1 packet of Quorn mince
2 tins organic chopped tomatoes
1 onion, finely diced
1 tsp garlic
2 tbsp organic tomato paste
Pinch of Himalayan salt
1 tbsp oregano
1 cup mushrooms, chopped
1 cup spinach
Bio Cheese, grated (optional)
2 zucchini’s per person, spiralised
Sauté the onion and garlic in a pan.
Add in the Quorn and mushrooms.
Sauté for 5 minutes.
Add in the remaining ingredients, except zucchini, and simmer for 15 minutes.
When ready to serve, lightly steam or sauté the spiralised zucchini noodles, and top with sauce and grated cheese.
