1 tbsp sweet chilli sauce
1 tbsp soy sauce
1 tbsp crunchy peanut butter
2 chicken breasts, diced
1 tbsp fresh coriander
Green salad, to serve
Preheat the oven to 180°C.
Combine sweet chilli, soy and peanut butter in a bowl, and place in the microwave for 60 seconds or until peanut butter has melted. Stir well, until all ingredients are mixed together.
Coat the chicken in the mixture and allow to marinate for as long as possible.
Line a baking dish with grease proof paper, place the chicken in the dish and bake for 30 – 40 minutes or until the chicken is cooked through.
Scatter with coriander and serve with a green salad.
