1 ½ cups pumpkin, cooked and pureed
2 egg whites, whipped
2 tsp coconut oil
3 tbsp coconut milk
2-4 teaspoons liquid stevia
¼ cup berries, pureed
2 scoops vanilla protein powder
2 tbsp cinnamon
½ tsp baking soda
½ tsp baking powder
½ tsp ground cloves
1 tsp chia seeds
Preheat the oven to 170°C. Line or grease a pie or small slice dish.
Mix wet ingredients together, except egg whites.
Mix together the rest of the ingredients, then add to the wet ingredients.
Fold in the egg whites.
Pour into the dish and bake for 20-30 minutes or until cooked through.
