2 zucchinis, grated and squeezed out
8 semi sun dried tomatoes, chopped
½ block Danish feta, chopped
2 eggs, beaten
1-2 tbsp almond meal (to hold mixture together if needed)
Cook the quinoa as per package directions.
Add all ingredients to a large bowl. Mix together well. If the mixture is too wet to hold into a ball, add some almond meal.
Shape into ball shapes and flatten to patties.
Spray a fry pan with coconut oil spray, and over a medium heat cook the patties for 5 minutes on each side.
Serve with a spinach salad.
