1 Portobello mushroom
Spinach to serve
Preheat a fan forced oven to 180°C.
Remove the stalk from the mushroom, and place on a baking tray. Crack an egg into the mushroom cup, and place into the oven for 10-12 minutes, or until egg whites are cooked through.
Sprinkle with Himalayan salt and cracked pepper, and serve with fresh or wilted spinach.
