1 cup low fat cottage cheese
½ cup oats
1 tsp vanilla essence
Berries, to serve
Blend together all ingredients in a blender, until smooth.
Over a medium heat, heat some coconut oil in a pan.
Pour approximately ¼ of the pancake mix into the pan and cook for 1 -2 minutes, on each side or until brown.
Serve with fruit.
