3 pieces of mountain bread
1 tin black beans, drained and rinsed
1/3 cup cheese
1 ripe avocado
1 tsp natural yoghurt
1-2 tomatoes, finely diced
1/3 cup light sour cream or natural yoghurt
Preheat the oven to 200 degrees. Line a baking tray with grease proof paper.
Cut the mountain bread into 9 pieces, and place on the lined baking tray. Bake in the oven for 5 minutes.
Top the bread with a teaspoon of black beans, and a pinch of cheese. Return to the oven for 1-2 minutes.
Mash the avocado, and mix in the natural yoghurt until smooth.
When ready to eat, top the mountain bread with a little tomato, avocado and sour cream.
