2 Chicken fillets, butterflied
½ cup quinoa flakes
¼ cup chia seeds
1 tsp mixed herbs
1 tsp paprika
½ tsp turmeric
Preheat the oven to 180°C. Line a baking tray.
Mix together the quinoa, chia and spices in a small bowl.
Beat the egg with a tbsp of water in another small bowl.
Dip the chicken in the egg mix, then coat in the quinoa crumb mix.
Bake in the oven for 20 – 25 minutes or until the chicken is cooked through.
