2 chicken breasts, diced
1 tbsp coconut oil
1 tbsp green curry paste
1 can coconut milk
3 cups vegetables (broccoli, snow peas, carrots, cauliflower, onion etc)
Thai rice noodles or Slim Pasta to serve
Heat the coconut oil in a pan over a medium to high heat. Add the chicken and curry paste and stir until chicken is coated.
Pour in the coconut milk, bring to the boil. Add the vegetables and then reduce and simmer for 20-25 minutes.
Serve with noodles.
